This olive oil is the fruit of a precious heritage, both cultural and organoleptic. Through it, we wish to share a hidden tradition and culture, traveling across the world and through time.

Hand-harvested and transported in burlap sacks to preserve their freshness, our olives are pressed in Akbou. Through washing, crushing and triple filtration, this precise process blends ancestral savoir-faire with modern technology to extract the pure essence of an eternal land.

The High-Altitude Mountain Terroir

​Unlike the vast, flat, industrialized olive plantations found in many parts of the Mediterranean, Kabylie’s olive trees grow on rugged, steep mountain slopes, often thousands of feet above sea level.

​The Climate Stress Benefit: The trees endure harsh, cold winters with mountain snow and intense, dry Mediterranean summers. This natural thermal contrast forces the roots deep into the rocky, mineral-rich soil and stresses the tree just enough to concentrate the flavor compounds, leading to an oil packed with polyphenols (natural antioxidants) and character.

​Pure Air and Sea Winds: Nestled between the Djurdjura mountains and the Mediterranean coast, the groves are continuously washed by clean mountain air and marine breezes, keeping the fruit remarkably healthy and pest-resistant without the need for intensive chemical interventions.

Centenarian and Ancestral Trees

​Many of the groves in Kabylie are not just decades old—they are centenarian or even older, handed down through families for generations.

​The Root Systems:

These ancient trees have massive, gnarled trunks and expansive root systems that have spent hundreds of years absorbing the unique mineral profile of the local earth. Older trees produce lower yields than intensive young orchards, but the fruit they do yield carries a far more complex, mature, and deeply nuanced flavor profile.

​The Chemlal Variety: Kabylie is home to the native Chemlal olive, a variety perfectly adapted over millennia to this specific mountainous ecosystem. It gives the oil its signature velvety smoothness, balancing fresh green notes with a delicate, nutty finish.

Preserved Manual Sourcing (The Human Element)

​The extreme, steep terrain means mechanization is practically impossible.

​Hand-Harvested Tradition: Every single olive must be harvested by hand, using traditional methods where families gather to comb the branches and collect the fruit on nets.

​Zero Damage to Fruit: Because heavy machinery cannot access the steep ridges, the olives are spared the bruising common in mass-production, ensuring the fruit arrives at the mill intact and pristine.
